A standard plate count indicates a substantial number of microbes, how do you ensure the food is safe to eat?

microbes are ubiquitous and food is no exemption. the good news however is that only a few percentage of these microbes is pathogenic. even if microbial count is high, there is no need to worry if the the bacteria is non-pathogenic. anyway, they will be destroyed in the acidic conditions of the digestive tract or simple procedures like heating. however, you have to identify or characterize which of the colonies in your plate is of a pathogenic bacteria. in this way, the appropriate measures to eliminate the danger of ingesting such harmful bacteria will be applied.
